Do you mean contrails ? I usually find they kick in at the appropriate altitude, you'll need to go into the settings menu and make sure they are switched on though.

The contrails appear above 30,000ft. As for making planes 'smoke' like on the Extra 300, I suppose that takes some programme file editing.
